Whole Beef Tenderloin
In most cases, Luigi will trim and tie your whole beef tenderloin prior to you picking it up at the store. This means that all you have to do is rub it down with your favorite herbs and spices and pop it in the over for around 30 to 35 minutes. Here are a few tips to help you cook the juiciest whole beef tenderloin.

Before rubbing it down and cooking it, bring the tenderloin to room temperature by sitting it out on the counter lightly covered for about half an hour.

Find an off the shelf meat rub or create your own with simple herbs and spices like garlic, salt, pepper, dried rosemary, thyme and basil leaves. Rub your tenderloin down generously with your dry rub.

Pre-heat your oven to 425 degrees. Place your tenderloin in a shallow pan deep enough to cover the thickness of the tenderloin. Cover the pan with the lid or with aluminum foil.

Bake at 425 degrees for about 30 minutes. This will result in a medium rare (125 degreee internal temperature). If you want a well done tenderloin leave it in for an additional 10 to 15 minutes. Remember, the meat will continue to cook even after you've taken it out of the oven.

Let the meat rest for about 15 minutes. This will help the internal juices saturate the tenderloin throughout.

Prime Rib Roast
Standing Rib Roast
Ingredients

3-4 tablespoons of extra virgin olive oil

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh tyme
-
2 cloves of fresh chopped garlic
-
3 1/2 teaspoons sea salt
-
1 1/2 teaspoons fresh ground pepper

Luigi's will prepare your rib roast for you including trimming and tying so it's ready for the oven when you are.
Cooking directions
Take your rib roast out of the refrigerator at least two hours before roasting. You want the roast to be at room temperature before popping it in the oven.
Mix the olive oil and herbs in a small bowl. Pour over meat and rub in thoroughly. Add salt and pepper generously to the outside of the roast.
Preheat your oven to 500 degrees. Place meat in center of oven.
After 25 minutes turn oven down to 350 degrees. Let the roast continue to cook until you reach an internal temperature of 125 degrees about an hour and a half after you turn the oven temperature down.
Remove rib roast from oven and place on cutting board. Let the rib roast sit for about 20 minutes. It will continue to cook as it rests. After it has rested, slice and serve. Watch the video below for additional tips and advice.
